Yummy dinner

On our "load up" day last week, we decided to try homemade fish and chips.  I ended up bailing on the homemade "chips" so I could focus on the fish part.

We are able to get wild caught cod here for a pretty affordable price, so we purchased that.  I used a Tyler Florence recipe for the batter.  The only thing I was missing was rice flour for the initial dredging and I think it would have helped.  Regular flour seems to repel rather than absorb the batter.

The fish turned out great, tasting very much like a good restaurant batch.  Mmmmm.

And just so you know, the kids had their veggies BEFORE dinner as an appetizer.  We often put out a plate of carrots and broccoli with hummus while we cook dinner since they're more likely to consume a larger amount then.  For this special night though, I attempted Kale Chips.

Take a head of kale and chop it into large pieces, discarding a hard pieces and stems.  Toss with olive oil and sea salt and bake for 20min at 300 degrees. They turn out super crispy and light. 

I wasn't sure how it would go over with the kids.  But Ephraim said "yummy lettuce chips!" and it took about 10 minutes to see this
Adin keeps asking me to make them again, so I guess they liked 'em.  I wonder what they would taste like with coconut oil instead of the olive oil?  I may try that next time.

I do the same with the veggies, a big tray goes out while I make dinner to keep the hungry kiddos out of the kitchen snacking on junk and they get filled up on veggies with out realizing it. I have been wanting to try kale chips but somehow always forget to pick up kale at the store. I will try them soon and let you know how it goes over here. You can make them in a food dehydrator too. Grape seed is another good oil for cooking with as it doesn't hydrolyze when it gets hot. (a tip from Dr OZ)

  3. This looks so yummy, nice fresh fish awesome! I really like the idea of kale chips, I didn't realize you could do that! LOL Great idea, I'm going to try it with my girls. Thanks!
